- Firm tofu - 300 grams
- Lemongrass stalks - 2 stalks
- Garlic - 2 cloves
- Ginger - 1 inch piece
- Soy sauce - 3 tablespoons
- Olive oil - 2 tablespoons
- Bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Green onions - 2 stalks, chopped
- Coriander leaves - a handful, for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- Press the tofu to remove excess moisture, then cut it into 1-inch cubes.
- Finely chop the lemongrass, garlic, and ginger.
- In a bowl, mix the chopped lemongrass, garlic, ginger, soy sauce, salt, and black pepper to create a marinade.
- Marinate the tofu cubes in the mixture for at least 10 minutes.
- Heat olive oil in a non-stick skillet over medium heat.
- Add the marinated tofu cubes to the skillet and cook until golden brown on all sides, about 8-10 minutes.
- Add the sliced bell pepper and julienned carrot to the skillet and stir-fry for another 5 minutes until vegetables are tender.
- Taste and adjust seasoning if necessary, then remove from heat.
- Serve hot, garnished with chopped green onions and coriander leaves.
