Ingredients

  • Firm tofu - 300 grams
  • Lemongrass stalks - 2 stalks
  • Garlic - 2 cloves
  • Ginger - 1 inch piece
  • Soy sauce - 3 tablespoons
  • Olive oil - 2 tablespoons
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Green onions - 2 stalks, chopped
  • Coriander leaves - a handful, for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Press the tofu to remove excess moisture, then cut it into 1-inch cubes.
  2. Finely chop the lemongrass, garlic, and ginger.
  3. In a bowl, mix the chopped lemongrass, garlic, ginger, soy sauce, salt, and black pepper to create a marinade.
  4. Marinate the tofu cubes in the mixture for at least 10 minutes.
  5. Heat olive oil in a non-stick skillet over medium heat.
  6. Add the marinated tofu cubes to the skillet and cook until golden brown on all sides, about 8-10 minutes.
  7. Add the sliced bell pepper and julienned carrot to the skillet and stir-fry for another 5 minutes until vegetables are tender.
  8. Taste and adjust seasoning if necessary, then remove from heat.
  9. Serve hot, garnished with chopped green onions and coriander leaves.
