Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Lemongrass - 2 stalks, finely minced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Soy sauce - 2 tablespoons, low sodium
  • Fish sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Coconut sugar - 1 teaspoon (or equivalent sweetener)
  • Chili flakes - 1 teaspoon (optional, adjust to taste)
  • Black pepper - 1/2 teaspoon
  • Lime - 1, juiced
  • Fresh cilantro - for garnish

Steps

  1. In a mixing bowl, combine the minced lemongrass, garlic, ginger, soy sauce, fish sauce, sesame oil, coconut sugar, chili flakes, black pepper, and lime juice. Mix well to form a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 15 minutes, or up to 2 hours for more flavor.
  3. Preheat a grill or grill pan over medium-high heat. Once hot, lightly oil the grill grates to prevent sticking.
  4. Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 75°C.
  5. Once cooked, remove the chicken from the grill and let it rest for a couple of minutes. Slice into strips.
