Ingredients

  • Chicken breast - 250 grams
  • Jasmine rice - 150 grams
  • Chicken broth - 300 ml
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Green onions - 2, chopped
  • Broccoli - 100 grams, cut into florets
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed. Fluff with a fork and set aside.
  3. While the rice is cooking, cut the chicken breast into bite-sized pieces and season with salt and pepper.
  4. In a large skillet, heat olive oil over medium heat. Add minced garlic and ginger, sauté for 1 minute until fragrant.
  5. Add the chicken pieces to the skillet and cook for 5-7 minutes until golden brown and cooked through.
  6. Stir in the lemon juice, lemon zest, and soy sauce, cooking for an additional 2 minutes.
  7. Add the broccoli florets and cook for another 3-4 minutes until the broccoli is tender but still vibrant green.
  8. Serve the lemon chicken over the cooked jasmine rice, garnished with chopped green onions.
