- Soy sauce - 1 tablespoon
- Olive oil - 1 tablespoon
- Green onions - 2, chopped
- Broccoli - 100 grams, cut into florets

Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed. Fluff with a fork and set aside.
- While the rice is cooking, cut the chicken breast into bite-sized pieces and season with salt and pepper.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and ginger, sauté for 1 minute until fragrant.
- Add the chicken pieces to the skillet and cook for 5-7 minutes until golden brown and cooked through.
- Stir in the lemon juice, lemon zest, and soy sauce, cooking for an additional 2 minutes.
- Add the broccoli florets and cook for another 3-4 minutes until the broccoli is tender but still vibrant green.
- Serve the lemon chicken over the cooked jasmine rice, garnished with chopped green onions.
