- Jasmine rice - 150 grams
- Water - 300 milliliters
- Lao Gan Ma chili oil - 2 tablespoons
- Spinach - 100 grams, chopped
- Carrot - 1 medium, julienned
- Spring onion - 2, finely sliced
- Garlic - 2 cloves, minced
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain well.
- In a pot, combine the rinsed rice and 300 milliliters of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
- While the rice is cooking, heat a non-stick skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the chopped spinach and julienned carrot to the skillet, stirring for about 3-4 minutes until the vegetables are wilted and tender.
- Season the vegetables with soy sauce, sesame oil, salt, and pepper. Mix well and cook for another 1-2 minutes.
- Once the rice is cooked, fluff it with a fork and divide it into two bowls.
- Top each bowl of rice with the sautéed vegetables, then drizzle 1 tablespoon of Lao Gan Ma chili oil over each serving.
- Garnish with sliced spring onions before serving hot.
