Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 milliliters
  • Lao Gan Ma chili oil - 2 tablespoons
  • Spinach - 100 grams, chopped
  • Carrot - 1 medium, julienned
  • Spring onion - 2, finely sliced
  • Garlic - 2 cloves, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain well.
  2. In a pot, combine the rinsed rice and 300 milliliters of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
  3. While the rice is cooking, heat a non-stick skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Add the chopped spinach and julienned carrot to the skillet, stirring for about 3-4 minutes until the vegetables are wilted and tender.
  5. Season the vegetables with soy sauce, sesame oil, salt, and pepper. Mix well and cook for another 1-2 minutes.
  6. Once the rice is cooked, fluff it with a fork and divide it into two bowls.
  7. Top each bowl of rice with the sautéed vegetables, then drizzle 1 tablespoon of Lao Gan Ma chili oil over each serving.
  8. Garnish with sliced spring onions before serving hot.
