Ingredients
- All-purpose flour - 200 grams
- Water - 100 ml
- Salt - 1/2 teaspoon
- Beef shank - 250 grams
- Ginger - 1 slice
- Garlic - 2 cloves, smashed
- Star anise - 1
- Soy sauce - 1 tablespoon
- Chinese cooking wine - 1 tablespoon
- Green onions - 2, chopped
- Cilantro - a handful, chopped
- Chili oil - 1 tablespoon
- Beef broth - 1 liter
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while kneading until a smooth dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.
- In a pot, add the beef shank, ginger, smashed garlic, star anise, soy sauce, Chinese cooking wine, and beef broth. Bring to a boil, then reduce the heat and simmer for 45 minutes until the beef is tender.
- While the beef is cooking, divide the rested dough into two equal parts. Roll each part into a long rope, then stretch and pull to form noodles, about 1 cm thick. Dust with flour to prevent sticking.
- Once the beef is tender, remove it from the pot, and slice it thinly. Strain the broth and return it to the pot, keeping it warm.
- In a serving bowl, place a portion of the hand-pulled noodles and ladle hot broth over them. Top with sliced beef, chopped green onions, cilantro, and a drizzle of chili oil.
