- Beef shank - 300g
- Water - 1.5 liters
- Noodles (fresh or dried) - 200g

- Star anise - 2 pieces
- Soy sauce - 2 tbsp
- Salt - to taste
- Green onions - 2, chopped
- Cilantro - a handful, chopped
- Chili oil - 1 tbsp (optional)
Steps
- In a pot, add the beef shank, 1.5 liters of water, minced garlic, ginger slices, star anise, soy sauce, and salt. Bring to a boil, then reduce heat and simmer for 40-50 minutes until the beef is tender.
- Once cooked, remove the beef shank from the pot and let it rest for 5 minutes before slicing it thinly.
- In the same broth, add the noodles and cook according to package instructions until al dente, usually about 3-5 minutes for fresh noodles or 8-10 minutes for dried noodles.
- While the noodles are cooking, prepare your serving bowls. Place a generous amount of cooked noodles in each bowl.
- Ladle the hot beef broth over the noodles, ensuring to include some of the garlic and ginger for flavor.
- Top the noodles with sliced beef, chopped green onions, and cilantro. Drizzle with chili oil if desired, and serve immediately.
