Ingredients

  • Beef shank - 300 grams
  • Water - 1.5 liters
  • Ginger - 10 grams, sliced
  • Green onions - 2 sticks, chopped
  • Star anise - 2 whole
  • Cumin seeds - 1 teaspoon
  • Salt - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Noodles (fresh or dried) - 200 grams
  • Garlic - 2 cloves, minced
  • Chili oil - 1 teaspoon
  • Coriander leaves - for garnish
  • Bok choy - 100 grams, blanched

Steps

  1. In a large pot, combine the beef shank, water, ginger, green onions, star anise, cumin seeds, and salt. Bring to a boil over high heat.
  2. Reduce the heat to low and simmer for about 40 minutes, skimming any foam that forms on the surface.
  3. After 40 minutes, add the soy sauce and continue to simmer for an additional 20 minutes until the beef is tender.
  4. Remove the beef from the pot and let it cool slightly before slicing it thinly.
  5. In a separate pot, cook the noodles according to the package instructions, then drain and set aside.
  6. Strain the broth to remove the spices and solids, then return it to the pot and keep warm.
  7. To serve, place a portion of noodles in a bowl, top with the sliced beef, and ladle the hot broth over it.
  8. Drizzle with chili oil, garnish with coriander leaves and add blanched bok choy on the side.
