- Beef shank - 300 grams
- Water - 1.5 liters
- Ginger - 10 grams, sliced
- Green onions - 2 sticks, chopped
- Star anise - 2 whole
- Cumin seeds - 1 teaspoon
- Salt - 1 teaspoon
- Soy sauce - 1 tablespoon
- Noodles (fresh or dried) - 200 grams
- Garlic - 2 cloves, minced
- Chili oil - 1 teaspoon
- Coriander leaves - for garnish
- Bok choy - 100 grams, blanched
Steps
- In a large pot, combine the beef shank, water, ginger, green onions, star anise, cumin seeds, and salt. Bring to a boil over high heat.
- Reduce the heat to low and simmer for about 40 minutes, skimming any foam that forms on the surface.
- After 40 minutes, add the soy sauce and continue to simmer for an additional 20 minutes until the beef is tender.
- Remove the beef from the pot and let it cool slightly before slicing it thinly.
- In a separate pot, cook the noodles according to the package instructions, then drain and set aside.
- Strain the broth to remove the spices and solids, then return it to the pot and keep warm.
- To serve, place a portion of noodles in a bowl, top with the sliced beef, and ladle the hot broth over it.
- Drizzle with chili oil, garnish with coriander leaves and add blanched bok choy on the side.
