- Beef shank - 300 grams
- Beef bones - 200 grams
- Water - 1.5 liters
- Noodles (fresh or dried) - 200 grams
- Garlic - 4 cloves, minced
- Ginger - 1 inch piece, sliced
- Star anise - 2 pieces
- Cinnamon stick - 1
- Soy sauce - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chili oil - 1 tablespoon
- Coriander leaves - a handful, chopped
- Green onions - 2, chopped
- Daikon radish - 100 grams, sliced
Steps
- In a large pot, combine beef shank, beef bones, water, garlic, ginger, star anise, and cinnamon stick. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low and let it simmer for 1.5 hours, skimming off any foam or impurities that rise to the surface.
- After 1.5 hours, remove the beef shank and set aside to cool. Strain the broth to remove solids, then return the liquid to the pot.
- Add soy sauce, salt, and black pepper to the strained broth. Bring to a gentle simmer.
- While the broth is simmering, cook the noodles according to package instructions. Drain and set aside.
- Shred the cooled beef shank into bite-sized pieces and add it back into the broth along with the sliced daikon radish. Simmer for an additional 10 minutes.
- To serve, place a portion of cooked noodles in a bowl, ladle the hot beef broth and beef over the noodles, and drizzle with chili oil. Garnish with chopped coriander leaves and green onions.
