- Lamb shoulder - 300 grams, cut into small cubes
- Water - 1 liter
- Ginger - 1 tablespoon, sliced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Daikon radish - 100 grams, diced
- Green onions - 2, chopped
- Soy sauce - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cilantro - for garnish (optional)
Steps
- In a large pot, add 1 liter of water and bring to a boil.
- Add the cubed lamb shoulder to the boiling water and let it cook for about 5 minutes. Skim off any foam that rises to the surface.
- Add the sliced ginger, minced garlic, diced carrot, and diced daikon radish to the pot.
- Reduce the heat to a simmer and cover the pot. Cook for 45 minutes, or until the lamb is tender.
- Stir in the soy sauce, sesame oil, salt, and black pepper. Adjust seasoning to taste.
- Serve the soup hot, garnished with chopped green onions and cilantro, if desired.
