Ingredients

  • Lamb shoulder - 300 grams, cut into small cubes
  • Water - 1 liter
  • Ginger - 1 tablespoon, sliced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Daikon radish - 100 grams, diced
  • Green onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish (optional)

Steps

  1. In a large pot, add 1 liter of water and bring to a boil.
  2. Add the cubed lamb shoulder to the boiling water and let it cook for about 5 minutes. Skim off any foam that rises to the surface.
  3. Add the sliced ginger, minced garlic, diced carrot, and diced daikon radish to the pot.
  4. Reduce the heat to a simmer and cover the pot. Cook for 45 minutes, or until the lamb is tender.
  5. Stir in the soy sauce, sesame oil, salt, and black pepper. Adjust seasoning to taste.
  6. Serve the soup hot, garnished with chopped green onions and cilantro, if desired.
