Ingredients

  • Lamb shoulder - 300 grams, cut into small cubes
  • Egg noodles - 200 grams
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Onion - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Chinese cabbage - 100 grams, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Star anise - 2 pieces
  • Cinnamon stick - 1 piece
  • Water - 1.5 liters
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2 stalks, chopped for garnish

Steps

  1. In a large pot, heat sesame oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant.
  2. Add the sliced onion and lamb cubes to the pot, cooking until the lamb is browned on all sides.
  3. Pour in the water and bring to a boil. Add star anise, cinnamon stick, soy sauce, salt, and black pepper. Reduce heat and let it simmer for about 30 minutes.
  4. After 30 minutes, add the julienned carrot and chopped Chinese cabbage, continuing to simmer for another 10 minutes.
  5. While the vegetables are cooking, prepare the egg noodles according to the package instructions and drain them.
  6. To serve, place a portion of the cooked noodles in a bowl, ladle the hot lamb soup over the noodles, and garnish with chopped green onions.
