Ingredients

  • Lamb shoulder - 300 grams, diced into 2.5 cm cubes
  • Soy sauce - 30 ml
  • Shaoxing wine - 15 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Five-spice powder - 1 teaspoon
  • Chili flakes - 1/2 teaspoon
  • Sesame oil - 1 teaspoon
  • Spring onion - 1, chopped for garnish
  • Vegetable oil - for grilling
  • Wooden skewers - 4, soaked in water for 30 minutes

Steps

  1. In a mixing bowl, combine soy sauce, Shaoxing wine, minced garlic, grated ginger, five-spice powder, chili flakes, and sesame oil to create the marinade.
  2. Add the diced lamb to the marinade, mix well, and let it marinate in the refrigerator for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat and brush it lightly with vegetable oil.
  4. Thread the marinated lamb pieces onto the soaked wooden skewers.
  5. Grill the skewers for about 8-10 minutes, turning occasionally until the lamb is cooked to your liking and charred slightly.
  6. Remove from the grill and let rest for a couple of minutes.
  7. Garnish with chopped spring onions and serve immediately with your choice of dipping sauce.
