Ingredients

  • Lamb shoulder - 300 grams, cut into 2 cm cubes

  • Soy sauce - 2 tablespoons
  • Shaoxing wine - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. In a bowl, combine minced garlic, grated ginger, soy sauce, Shaoxing wine, ground cumin, ground coriander, chili powder, black pepper, salt, and vegetable oil to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated lamb cubes onto the soaked skewers, leaving a little space between each piece.
  5. Grill the lamb kebabs for about 10-12 minutes, turning occasionally, until they reach your desired doneness and are nicely charred.
  6. Remove from the grill and let rest for a few minutes before serving.
