Ingredients

  • All-purpose flour - 100 grams
  • Water - 200 ml
  • Egg - 1 large
  • Ground lamb - 150 grams
  • Green onion - 2 stalks, finely chopped
  • Cilantro - 10 grams, chopped
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - 2 tablespoons
  • Chili sauce - for serving (optional)

Steps

  1. In a mixing bowl, combine the all-purpose flour and water to form a smooth batter. Let it rest for 10 minutes.
  2. In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the ground lamb, cumin powder, salt, and black pepper. Cook until the lamb is browned and fully cooked, about 5-7 minutes. Stir in chopped green onions and cilantro, then remove from heat.
  3. In the same bowl with the batter, whisk in the egg until fully combined.
  4. Heat a non-stick skillet over medium heat and add a little vegetable oil. Pour half of the batter into the skillet, swirling to form a thin pancake. Cook for 1-2 minutes until the edges start to lift and the bottom is golden.
  5. Spoon half of the lamb mixture onto one half of the pancake, fold it over, and cook for another 1-2 minutes to heat through. Remove from the skillet and keep warm. Repeat with the remaining batter and lamb mixture.
  6. Serve hot with chili sauce on the side if desired.
