Ingredients
- All-purpose flour - 100 grams
- Water - 200 ml
- Egg - 1 large
- Ground lamb - 150 grams
- Green onion - 2 stalks, finely chopped
- Cilantro - 10 grams, chopped
- Cumin powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - 2 tablespoons
- Chili sauce - for serving (optional)
Steps
- In a mixing bowl, combine the all-purpose flour and water to form a smooth batter. Let it rest for 10 minutes.
- In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the ground lamb, cumin powder, salt, and black pepper. Cook until the lamb is browned and fully cooked, about 5-7 minutes. Stir in chopped green onions and cilantro, then remove from heat.
- In the same bowl with the batter, whisk in the egg until fully combined.
- Heat a non-stick skillet over medium heat and add a little vegetable oil. Pour half of the batter into the skillet, swirling to form a thin pancake. Cook for 1-2 minutes until the edges start to lift and the bottom is golden.
- Spoon half of the lamb mixture onto one half of the pancake, fold it over, and cook for another 1-2 minutes to heat through. Remove from the skillet and keep warm. Repeat with the remaining batter and lamb mixture.
- Serve hot with chili sauce on the side if desired.
