Ingredients

  • All-purpose flour - 250 grams
  • Active dry yeast - 5 grams
  • Sugar - 10 grams
  • Salt - 5 grams
  • Warm water - 150 ml
  • Ground lamb - 200 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Green onions - 2, chopped
  • Cilantro - 2 tablespoons, chopped

Steps

  1. In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 10 minutes until frothy.
  2. Add flour and salt to the yeast mixture, and knead until a smooth dough forms, about 10 minutes. Cover and let it rise in a warm place for about 30 minutes or until doubled in size.
  3. In a skillet over medium heat, add a little oil and sauté the onions until translucent. Add garlic and ginger, cooking for an additional minute.
  4. Add ground lamb to the skillet, breaking it apart. Cook until browned. Stir in soy sauce, sesame oil, black pepper, and cook for another 3-4 minutes.
  5. Remove from heat and mix in chopped green onions and cilantro. Allow the filling to cool.
  6. Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a circle about 10 cm in diameter.
  7. Place a spoonful of the lamb filling in the center of each circle. Gather the edges and pinch to seal, forming a bun.
  8. Place the buns on a baking tray lined with parchment paper and let them rise for another 15 minutes.
  9. Preheat the oven to 180°C (350°F). Bake the buns for 20-25 minutes or until golden brown on top.
  10. Remove from the oven and let cool slightly before serving.
