- Whole wheat pizza dough - 250 grams
- Red bell pepper - 1, diced
- Zucchini - 1 small, diced
- Carrot - 1 medium, julienned
- Green onion - 2, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, minced
- Peanuts - 30 grams, roughly chopped
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 tablespoon
- Sriracha or chili paste - 1 teaspoon
- Mozzarella cheese - 100 grams, shredded
- Cilantro - for garnish
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the whole wheat pizza dough on a floured surface to your desired thickness and transfer it to a baking sheet or pizza stone.
- In a pan over medium heat, add the sesame oil and sauté the minced garlic and ginger until fragrant, about 1 minute.
- Add the diced red bell pepper, zucchini, and julienned carrot to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
- Stir in the soy sauce, rice vinegar, and Sriracha, mixing well to combine. Remove from heat and stir in the chopped green onions and peanuts.
- Spread the vegetable mixture evenly over the rolled-out pizza dough.
- Sprinkle the shredded mozzarella cheese on top of the vegetables.
- Bake in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbly.
- Remove from the oven and let it cool for a couple of minutes before slicing.
- Garnish with fresh cilantro before serving.
