Ingredients
- Firm tofu - 300 grams
- Soy sauce - 2 tablespoons
- Cornstarch - 2 tablespoons
- Vegetable oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Carrot - 1 medium, sliced
- Scallions - 2, chopped
- Dry roasted peanuts - 50 grams
- Rice vinegar - 1 tablespoon
- Sugar - 1 teaspoon
- Sesame oil - 1 teaspoon
- Chili flakes - 1 teaspoon
- Water - 100 ml
Steps
- Press the tofu for about 15 minutes to remove excess moisture, then cut it into 1.5 cm cubes.
- In a bowl, toss the tofu cubes with soy sauce and let it marinate for 10 minutes.
- Coat the marinated tofu with cornstarch evenly.
- In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the tofu and cook until golden and crispy on all sides, about 8-10 minutes. Remove the tofu and set aside.
- In the same skillet, add 1 tablespoon of vegetable oil, then add garlic, ginger, and cook for about 30 seconds until fragrant.
- Add the diced red and green bell peppers and sliced carrot to the skillet, stir-frying for 3-4 minutes until slightly tender.
- Return the crispy tofu to the skillet and add the chopped scallions, peanuts, rice vinegar, sugar, sesame oil, chili flakes, and water. Stir to combine and cook for an additional 2-3 minutes until heated through.
- Serve hot over steamed rice or noodles.
