Ingredients

  • Firm tofu - 300 grams
  • Soy sauce - 2 tablespoons
  • Cornstarch - 2 tablespoons
  • Vegetable oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Carrot - 1 medium, sliced
  • Scallions - 2, chopped
  • Dry roasted peanuts - 50 grams
  • Rice vinegar - 1 tablespoon
  • Sugar - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Chili flakes - 1 teaspoon
  • Water - 100 ml

Steps

  1. Press the tofu for about 15 minutes to remove excess moisture, then cut it into 1.5 cm cubes.
  2. In a bowl, toss the tofu cubes with soy sauce and let it marinate for 10 minutes.
  3. Coat the marinated tofu with cornstarch evenly.
  4. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the tofu and cook until golden and crispy on all sides, about 8-10 minutes. Remove the tofu and set aside.
  5. In the same skillet, add 1 tablespoon of vegetable oil, then add garlic, ginger, and cook for about 30 seconds until fragrant.
  6. Add the diced red and green bell peppers and sliced carrot to the skillet, stir-frying for 3-4 minutes until slightly tender.
  7. Return the crispy tofu to the skillet and add the chopped scallions, peanuts, rice vinegar, sugar, sesame oil, chili flakes, and water. Stir to combine and cook for an additional 2-3 minutes until heated through.
  8. Serve hot over steamed rice or noodles.
