Ingredients

  • Pizza dough - 200 grams
  • Cooked chicken breast, diced - 150 grams
  • Bell pepper, diced - 50 grams
  • Zucchini, diced - 50 grams
  • Green onions, chopped - 30 grams
  • Roasted peanuts, chopped - 30 grams
  • Soy sauce (low-sodium) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 teaspoon
  • Cornstarch - 1 teaspoon
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Red pepper flakes - 1 teaspoon
  • Mozzarella cheese, shredded - 100 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a bowl, mix soy sauce, sesame oil, rice vinegar, cornstarch, minced garlic, minced ginger, and red pepper flakes to create a marinade.
  3. Add the diced cooked chicken, bell pepper, zucchini, and half of the green onions to the marinade. Toss well to coat and let it sit for 10 minutes.
  4. Roll out the pizza dough on a floured surface to your desired thickness, then transfer it to a baking sheet or pizza stone.
  5. Spread the marinated chicken and vegetable mixture evenly over the pizza dough.
  6. Sprinkle the shredded mozzarella cheese on top, followed by the chopped roasted peanuts, and season with salt and black pepper to taste.
  7. Bake in the preheated oven for about 15-20 minutes, or until the crust is golden and the cheese is bubbly.
  8. Remove from the oven and garnish with the remaining green onions. Allow to cool slightly before slicing and serving.
