- Red bell pepper - 50 grams, diced
- Green onion - 2 stalks, chopped
- Roasted peanuts - 30 grams, chopped
- Egg - 1, beaten
- Almond flour - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Butter or oil - 1 tablespoon (for cooking)
- Lettuce leaves - 4 large, for wrapping
Steps
- In a large mixing bowl, combine the ground chicken, soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, diced red bell pepper, chopped green onion, chopped roasted peanuts, beaten egg, almond flour, salt, and black pepper. Mix until well combined.
- Form the mixture into 2 equal-sized patties.
- Heat a skillet over medium heat and add butter or oil. Once hot, place the patties in the skillet.
- Cook the patties for about 5-7 minutes on each side, or until they are fully cooked through and nicely browned.
- Remove the patties from the skillet and let them rest for a minute.
- To serve, place each patty inside two large lettuce leaves, adding additional chopped green onions or peanuts on top if desired.
