- Chicken breast - 250 grams, diced
- Soy sauce - 2 tablespoons
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Dried red chili peppers - 3, whole
- Bell pepper - 1/2, diced
- Green onion - 2, chopped
- Peanuts - 30 grams, roasted and unsalted
- Rice vinegar - 1 tablespoon
- Brown sugar - 1 teaspoon
- Sesame oil - 1 teaspoon
Steps
- In a bowl, marinate the diced chicken breast with soy sauce and cornstarch for 15 minutes.
- Heat vegetable oil in a non-stick skillet over medium-high heat. Add the marinated chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken and set aside.
- In the same skillet, add garlic, ginger, and dried red chili peppers. Sauté for 1-2 minutes until fragrant.
- Add diced bell pepper and cook for another 2-3 minutes until slightly tender.
- Return the chicken to the skillet, then add rice vinegar, brown sugar, and sesame oil. Stir well to combine all ingredients.
- Finally, stir in the chopped green onion and roasted peanuts. Cook for an additional 1-2 minutes.
