Ingredients

  • Zucchini - 2 medium-sized (approximately 400g)
  • Ground pork - 200g
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2 stalks, chopped
  • Red bell pepper - 1/2, diced
  • Mushrooms - 100g, sliced
  • Egg - 1 large
  • Shredded cheese (cheddar or mozzarella) - 50g
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Spiralize the zucchini using a spiralizer or julienne peeler and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  4. Add ground pork to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  5. Stir in diced red bell pepper and sliced mushrooms. Cook for an additional 3-4 minutes until the vegetables are tender.
  6. Pour in the soy sauce and sesame oil, mixing well. Season with salt and black pepper to taste.
  7. In a large bowl, combine the spiralized zucchini, cooked pork mixture, chopped green onions, and the egg. Mix until well combined.
  8. Transfer the mixture to a greased baking dish and spread evenly. Top with shredded cheese.
