- Zucchini - 2 medium-sized (approximately 400g)
- Ground pork - 200g
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2 stalks, chopped
- Red bell pepper - 1/2, diced
- Mushrooms - 100g, sliced
- Egg - 1 large
- Shredded cheese (cheddar or mozzarella) - 50g
- Salt - to taste
- Black pepper - to taste
- Olive oil - 1 tablespoon
Steps
- Preheat your oven to 190°C (375°F).
- Spiralize the zucchini using a spiralizer or julienne peeler and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add ground pork to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Stir in diced red bell pepper and sliced mushrooms. Cook for an additional 3-4 minutes until the vegetables are tender.
- Pour in the soy sauce and sesame oil, mixing well. Season with salt and black pepper to taste.
- In a large bowl, combine the spiralized zucchini, cooked pork mixture, chopped green onions, and the egg. Mix until well combined.
- Transfer the mixture to a greased baking dish and spread evenly. Top with shredded cheese.
- Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly.
- Remove from the oven, let cool for a few minutes, then serve warm.
