Keto Zongzi

Keto Zongzi is a delightful twist on the traditional Chinese sticky rice dumpling, using cauliflower rice as a low-carb alternative. Packed with flavorful marinated pork and wrapped in bamboo leaves, this dish is both satisfying and healthy.

Ingredients

  • Cauliflower rice - 400 grams
  • Pork belly - 200 grams, diced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Bamboo leaves - 6, soaked in water for 30 minutes
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, combine diced pork belly, soy sauce, sesame oil, minced garlic, grated ginger, salt, and black pepper. Marinate for at least 15 minutes.
  2. Prepare cauliflower rice by steaming it for about 5-7 minutes until tender. Allow to cool slightly.
  3. Lay out a bamboo leaf on a flat surface, and place about 100 grams of cauliflower rice in the center, pressing it down slightly.
  4. Add about 100 grams of the marinated pork mixture on top of the cauliflower rice.
  5. Top with a sprinkle of chopped green onions.
  6. Fold the sides of the bamboo leaf over the filling, then roll it tightly from the bottom to the top, creating a secured parcel. Repeat for the remaining ingredients.
  7. In a large pot, bring water to a boil. Place the wrapped zongzi into the pot and simmer for about 30-35 minutes.
  8. Carefully remove the zongzi from the pot and let them cool slightly before unwrapping and serving.
