Keto Zongzi
Keto Zongzi is a delightful twist on the traditional Chinese sticky rice dumpling, using cauliflower rice as a low-carb alternative. Packed with flavorful marinated pork and wrapped in bamboo leaves, this dish is both satisfying and healthy.

Ingredients
- Cauliflower rice - 400 grams
- Pork belly - 200 grams, diced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Bamboo leaves - 6, soaked in water for 30 minutes
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, combine diced pork belly, soy sauce, sesame oil, minced garlic, grated ginger, salt, and black pepper. Marinate for at least 15 minutes.
- Prepare cauliflower rice by steaming it for about 5-7 minutes until tender. Allow to cool slightly.
- Lay out a bamboo leaf on a flat surface, and place about 100 grams of cauliflower rice in the center, pressing it down slightly.
- Add about 100 grams of the marinated pork mixture on top of the cauliflower rice.
- Top with a sprinkle of chopped green onions.
- Fold the sides of the bamboo leaf over the filling, then roll it tightly from the bottom to the top, creating a secured parcel. Repeat for the remaining ingredients.
- In a large pot, bring water to a boil. Place the wrapped zongzi into the pot and simmer for about 30-35 minutes.
- Carefully remove the zongzi from the pot and let them cool slightly before unwrapping and serving.
