  • Prawns - 100 grams, peeled and deveined
  • Eggs - 2 large
  • Green onions - 2 stalks, chopped
  • Peas - 50 grams (optional for keto, can be omitted)
  • Carrots - 50 grams, diced
  • Soy sauce - 2 tablespoons (use tamari for gluten-free)
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon

Steps

  1. Heat the olive oil in a large skillet or wok over medium heat.
  2. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
  3. Add the diced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes.
  4. Stir in the prawns and cook until they turn pink, about 2-3 minutes.
  5. Push the chicken and prawns to one side of the skillet, then crack the eggs into the other side, scrambling them until fully cooked.
  6. Add the cauliflower rice, diced carrots, and peas (if using) to the skillet, stirring everything together.

  8. Cook for an additional 5-7 minutes, stirring frequently, until the cauliflower rice is tender but not mushy.
