- Almond flour - 100 grams
- Pork mince - 200 grams
- Egg - 1 large
- Green onions - 2, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Sesame oil - 1 teaspoon
- Chicken broth - 500 ml
- Mushrooms - 100 grams, sliced
- Spinach - 100 grams, fresh
- Salt - to taste
- Pepper - to taste
Steps
- In a mixing bowl, combine the pork mince, almond flour, egg, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Mix until well blended.
- Form small wontons by taking about 1 teaspoon of the mixture and placing it in the center of a small almond flour dough circle (using almond flour mixed with water to form a dough). Seal the edges to form a wonton.
- In a large pot, bring the chicken broth to a simmer over medium heat. Add the sliced mushrooms and cook for 5 minutes.
- Carefully add the wontons to the pot and cook for an additional 10-12 minutes, or until they are cooked through and float to the top.
- Add the fresh spinach to the pot and let it wilt for about 2 minutes before removing from heat.
- Serve hot, garnished with additional green onions if desired.
