Ingredients

  • Almond flour - 100 grams
  • Pork mince - 200 grams
  • Egg - 1 large
  • Green onions - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Chicken broth - 500 ml
  • Mushrooms - 100 grams, sliced
  • Spinach - 100 grams, fresh
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a mixing bowl, combine the pork mince, almond flour, egg, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Mix until well blended.
  2. Form small wontons by taking about 1 teaspoon of the mixture and placing it in the center of a small almond flour dough circle (using almond flour mixed with water to form a dough). Seal the edges to form a wonton.
  3. In a large pot, bring the chicken broth to a simmer over medium heat. Add the sliced mushrooms and cook for 5 minutes.
  4. Carefully add the wontons to the pot and cook for an additional 10-12 minutes, or until they are cooked through and float to the top.
  5. Add the fresh spinach to the pot and let it wilt for about 2 minutes before removing from heat.
  6. Serve hot, garnished with additional green onions if desired.
