- Walnuts - 100g, chopped
- Almond flour - 80g
- Erythritol - 40g
- Unsalted butter - 50g, melted
- Egg - 1 large
- Vanilla extract - 1 teaspoon
- Baking powder - 1/2 teaspoon
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour, erythritol, baking powder, and salt.
- In another bowl, whisk together the melted butter, egg, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and mix until a dough forms.
- Fold in the chopped walnuts until evenly distributed throughout the dough.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 5cm apart.
- Flatten each cookie slightly with the back of a spoon.
- Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
