Ingredients

  • Walnuts - 100g, chopped
  • Almond flour - 80g
  • Erythritol - 40g
  • Unsalted butter - 50g, melted
  • Egg - 1 large
  • Vanilla extract - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond flour, erythritol, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, egg, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until a dough forms.
  5. Fold in the chopped walnuts until evenly distributed throughout the dough.
  6. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 5cm apart.
  7. Flatten each cookie slightly with the back of a spoon.
  8. Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
  9. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
