Ingredients

  • Cauliflower rice - 300 grams
  • Eggs - 2 large
  • Green bell pepper - 100 grams, diced
  • Carrot - 50 grams, diced
  • Green onions - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Begin by preparing the cauliflower rice if not using pre-made; pulse florets in a food processor until they resemble rice grains.
  2. In a large skillet or wok, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the diced green bell pepper and carrot to the skillet, cooking for 3-4 minutes until slightly tender.
  4. Push the vegetables to one side of the skillet, crack the eggs into the empty space, and scramble until fully cooked.
  5. Stir in the cauliflower rice, soy sauce, and sesame oil, mixing everything thoroughly. Cook for an additional 5-7 minutes, stirring occasionally until the cauliflower is tender.
  6. Add the chopped green onions, and season with salt and black pepper to taste. Cook for another minute before serving.
