Ingredients

  • Cauliflower - 1 medium head (about 500g)
  • Soy sauce (or coconut aminos) - 4 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Fresh ginger, grated - 1 teaspoon
  • Green onions, chopped - 2 tablespoons
  • Stevia (or preferred sweetener) - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Red bell pepper, diced - 1/2 cup
  • Carrot, finely diced - 1/4 cup
  • Olive oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Remove the leaves and stem from the cauliflower and cut it into florets.
  2. Using a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
  3. In a small bowl, mix together soy sauce, sesame oil, minced garlic, grated ginger, and stevia to create the teriyaki sauce.
  4. In a large skillet or wok, heat olive oil over medium heat. Add the diced red bell pepper and carrots, sautéing for about 2-3 minutes until they begin to soften.
  5. Add the riced cauliflower to the skillet and stir-fry for an additional 5-7 minutes, until the cauliflower is tender but not mushy.
  6. Pour the teriyaki sauce over the cauliflower rice and mix well, cooking for another 2-3 minutes to allow the flavors to meld.
  7. Remove from heat and stir in the chopped green onions and sesame seeds.
  8. Season with salt to taste, serve hot, and enjoy your Keto Teriyaki Cauliflower Rice.
