Ingredients

  • Eggs - 4 large
  • Soy sauce - 60 ml
  • Water - 300 ml
  • Black tea leaves - 1 tablespoon
  • Star anise - 2 whole
  • Cinnamon stick - 1
  • Salt - 1 teaspoon
  • Peppercorns - 5 whole

Steps

  1. In a saucepan, place the eggs and cover them with water. Bring to a boil over medium heat.
  2. Once boiling, reduce the heat and let the eggs simmer for 8-10 minutes.
  3. Remove the eggs from the water and place them in a bowl of ice water to cool for about 5 minutes.
  4. Gently tap the eggs on a hard surface to crack the shells, creating a web of cracks without removing the shells.
  5. In a separate pot, combine the soy sauce, 300 ml of water, black tea leaves, star anise, cinnamon stick, salt, and peppercorns.
  6. Bring this mixture to a simmer over low heat and allow it to cook for about 5 minutes to let the flavors meld.
  7. Add the cracked eggs to the soy sauce mixture, ensuring they are submerged. Simmer on low heat for 30 minutes, stirring occasionally.
  8. Turn off the heat and let the eggs steep in the mixture for at least 1 hour, or overnight in the refrigerator for a deeper flavor.
  9. Once ready, remove the eggs from the marinade, peel them, and serve as a snack or appetizer.
