Ingredients

  • Shrimp (peeled and deveined) - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 3 cloves
  • Ginger (grated) - 1 tablespoon
  • Szechuan peppercorns (crushed) - 1 teaspoon
  • Red chili flakes - 1 teaspoon
  • Soy sauce (low-sodium) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions (chopped) - 2 tablespoons
  • Bell pepper (sliced) - 1 small
  • Cauliflower rice - 200 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine olive oil, minced garlic, grated ginger, crushed Szechuan peppercorns, red chili flakes, soy sauce, rice vinegar, and sesame oil to create the marinade.
  3. Add the shrimp to the marinade and toss until well coated. Let it marinate for 15 minutes.
