Ingredients

  • Almond flour - 120 grams
  • Egg - 1 large
  • Mozzarella cheese (shredded) - 100 grams
  • Cream cheese - 30 grams
  • Baking powder - 1 teaspoon
  • Szechuan peppercorns (ground) - 1 teaspoon
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Red bell pepper (sliced) - 50 grams
  • Green onions (sliced) - 30 grams
  • Fresh cilantro (chopped) - 2 tablespoons
  • Cheddar cheese (shredded) - 50 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, baking powder, and ground Szechuan peppercorns.
  3. In another bowl, mix the egg, mozzarella cheese, and cream cheese until smooth.
  4. Combine the wet and dry ingredients to form a dough.
  5. Line a baking sheet with parchment paper and spread the dough into a pizza shape, about 1 cm thick.
  6. Brush the crust with olive oil and bake for 10 minutes until golden brown.
  7. While the crust is baking, prepare the Szechuan sauce by mixing soy sauce with additional ground Szechuan peppercorns if desired.
  8. Remove the crust from the oven, spread the Szechuan sauce evenly over the pizza, and top with sliced red bell pepper, green onions, and cheddar cheese.
  9. Return the pizza to the oven and bake for an additional 10-12 minutes until the cheese is melted and bubbly.
  10. Once done, remove from the oven and garnish with fresh cilantro before slicing and serving.
