Ingredients
- Shirataki noodles - 200 grams
- Chicken breast, thinly sliced - 200 grams
- Bell pepper, sliced - 1 medium
- Zucchini, julienned - 1 medium
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Szechuan peppercorns - 1 teaspoon
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Chili oil - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onion, chopped - 2 stalks
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the Shirataki noodles under cold water for 2-3 minutes and drain well.
- In a large skillet, heat the chili oil over medium-high heat.
- Add the minced garlic, ginger, and Szechuan peppercorns, and sauté for about 1 minute until fragrant.
- Add the sliced chicken breast to the skillet, season with salt and black pepper, and stir-fry until cooked through, about 5-7 minutes.
- Add the sliced bell pepper and julienned zucchini to the skillet, and stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
- Add the drained Shirataki noodles into the skillet, pour in the soy sauce (or tamari) and sesame oil, and toss everything together to combine well. Cook for an additional 2-3 minutes to heat the noodles through.
- Remove from heat, garnish with chopped green onions, and serve immediately.
