Ingredients

  • Shirataki noodles - 200 grams
  • Chicken breast, thinly sliced - 200 grams
  • Bell pepper, sliced - 1 medium
  • Zucchini, julienned - 1 medium
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Szechuan peppercorns - 1 teaspoon
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Chili oil - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onion, chopped - 2 stalks
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the Shirataki noodles under cold water for 2-3 minutes and drain well.
  2. In a large skillet, heat the chili oil over medium-high heat.
  3. Add the minced garlic, ginger, and Szechuan peppercorns, and sauté for about 1 minute until fragrant.
  4. Add the sliced chicken breast to the skillet, season with salt and black pepper, and stir-fry until cooked through, about 5-7 minutes.
  5. Add the sliced bell pepper and julienned zucchini to the skillet, and stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  6. Add the drained Shirataki noodles into the skillet, pour in the soy sauce (or tamari) and sesame oil, and toss everything together to combine well. Cook for an additional 2-3 minutes to heat the noodles through.
  7. Remove from heat, garnish with chopped green onions, and serve immediately.
