Ingredients

  • Beef sirloin - 300 grams, thinly sliced
  • Cauliflower rice - 200 grams
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Green onions - 2 stalks, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce (low sodium) - 3 tablespoons
  • Szechuan peppercorns - 1 teaspoon, crushed
  • Chili paste - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine the sliced beef with soy sauce, Szechuan peppercorns, chili paste, minced garlic, grated ginger, sesame oil, salt, and black pepper. Let it marinate for at least 15 minutes.
  3. While the beef marinates, prepare the vegetables. In a baking dish, combine the cauliflower rice, sliced bell pepper, and zucchini. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.
  4. After marinating, place the beef on top of the vegetable mixture in the baking dish. Spread it out evenly.
  5. Bake in the preheated oven for 25-30 minutes, or until the beef is cooked through and the vegetables are tender. Stir halfway through cooking for even results.
  6. Remove from the oven and sprinkle with chopped green onions before serving.
