Ingredients
- Shirataki rice - 200 grams
- Coconut flour - 30 grams
- Psyllium husk powder - 10 grams
- Almond flour - 20 grams
- Erythritol sweetener - 30 grams
- Coconut milk - 100 ml
- Vanilla extract - 1 teaspoon
- Sugar-free dark chocolate, chopped - 40 grams
- Unsweetened shredded coconut - 20 grams
Steps
- Rinse the Shirataki rice under cold water and drain well.
- In a mixing bowl, combine the Shirataki rice, coconut flour, psyllium husk powder, almond flour, and erythritol sweetener.
- Add coconut milk and vanilla extract to the dry ingredients and mix until a dough forms.
- Divide the dough into 8 equal portions and flatten each portion in your palm.
- Place a piece of chopped sugar-free dark chocolate in the center of each flattened dough, then carefully wrap the dough around the chocolate and roll into a ball.
- Once all balls are formed, roll them in unsweetened shredded coconut to coat.
