- Pork tenderloin - 300 grams, diced
- Coconut oil - 2 tablespoons
- Bell pepper (red or yellow) - 1 medium, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Apple cider vinegar - 2 tablespoons
- Lily's sugar-free chocolate chips (or erythritol) - 2 tablespoons
- Xanthan gum - 1 teaspoon
- Water - 100 milliliters
- Salt - to taste
- Black pepper - to taste
Steps
- Heat coconut oil in a large skillet over medium heat.
- Add the diced pork tenderloin to the skillet and season with salt and black pepper. Cook until browned on all sides, about 5-7 minutes.
- Remove the pork from the skillet and set aside.
- In the same skillet, add diced onion, bell pepper, garlic, and ginger. Sauté until the vegetables are tender, about 4-5 minutes.
- In a small bowl, mix together soy sauce, apple cider vinegar, water, and sugar-free chocolate chips. Stir until the chocolate chips are melted and the mixture is combined.
- Return the pork to the skillet and pour the sauce over it. Stir to coat the pork and vegetables evenly.
- Sprinkle xanthan gum over the mixture and stir well to thicken the sauce, cooking for an additional 3-5 minutes until the sauce is bubbly.
- Taste and adjust seasoning with more salt or pepper if necessary.
