Ingredients

  • Pork tenderloin - 300 grams, diced
  • Coconut oil - 2 tablespoons
  • Bell pepper (red or yellow) - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Apple cider vinegar - 2 tablespoons
  • Lily's sugar-free chocolate chips (or erythritol) - 2 tablespoons
  • Xanthan gum - 1 teaspoon
  • Water - 100 milliliters
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat coconut oil in a large skillet over medium heat.
  2. Add the diced pork tenderloin to the skillet and season with salt and black pepper. Cook until browned on all sides, about 5-7 minutes.
  3. Remove the pork from the skillet and set aside.
  4. In the same skillet, add diced onion, bell pepper, garlic, and ginger. Sauté until the vegetables are tender, about 4-5 minutes.
  5. In a small bowl, mix together soy sauce, apple cider vinegar, water, and sugar-free chocolate chips. Stir until the chocolate chips are melted and the mixture is combined.
  6. Return the pork to the skillet and pour the sauce over it. Stir to coat the pork and vegetables evenly.
  7. Sprinkle xanthan gum over the mixture and stir well to thicken the sauce, cooking for an additional 3-5 minutes until the sauce is bubbly.
  8. Taste and adjust seasoning with more salt or pepper if necessary.
