Ingredients

  • 2 large bell peppers (red or green)
  • 200g ground pork or chicken
  • 100g cauliflower rice
  • 50g shiitake mushrooms, finely chopped
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce (or coconut aminos for a soy-free option)
  • 1 teaspoon ginger, grated
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 50g shredded cheese (optional for topping)
  • 1 teaspoon sesame seeds for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a skillet over medium heat, add the sesame oil. Sauté the garlic and ginger until fragrant.
  4. Add the ground pork or chicken to the skillet and cook until browned, breaking it apart with a spoon.
  5. Stir in the chopped shiitake mushrooms, cauliflower rice, green onions, soy sauce, salt, and pepper. Cook for about 5-7 minutes until the vegetables are tender.
  6. Remove the skillet from heat and let the mixture cool slightly.
  7. Stuff each bell pepper with the meat and vegetable mixture, pressing down gently to pack it in.
  8. Place the stuffed peppers upright in a baking dish. If using, sprinkle cheese on top of each stuffed pepper.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes, until the peppers are tender and the cheese is bubbly.
  11. Garnish with sesame seeds before serving.
