- 2 large bell peppers (red or green)
- 200g ground pork or chicken
- 100g cauliflower rice
- 50g shiitake mushrooms, finely chopped
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce (or coconut aminos for a soy-free option)
- 1 teaspoon ginger, grated
- 1 teaspoon sesame oil
- Salt and pepper to taste
- 50g shredded cheese (optional for topping)
- 1 teaspoon sesame seeds for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- In a skillet over medium heat, add the sesame oil. Sauté the garlic and ginger until fragrant.
- Add the ground pork or chicken to the skillet and cook until browned, breaking it apart with a spoon.
- Stir in the chopped shiitake mushrooms, cauliflower rice, green onions, soy sauce, salt, and pepper. Cook for about 5-7 minutes until the vegetables are tender.
- Remove the skillet from heat and let the mixture cool slightly.
- Stuff each bell pepper with the meat and vegetable mixture, pressing down gently to pack it in.
- Place the stuffed peppers upright in a baking dish. If using, sprinkle cheese on top of each stuffed pepper.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, until the peppers are tender and the cheese is bubbly.
- Garnish with sesame seeds before serving.
