Ingredients

  • Almond flour - 100 grams
  • Coconut flour - 20 grams
  • Baking powder - 1 teaspoon
  • Erythritol - 30 grams
  • Eggs - 2 large
  • Unsweetened almond milk - 60 ml
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Butter - 20 grams, melted

Steps

  1. In a mixing bowl, combine almond flour, coconut flour, baking powder, erythritol, and a pinch of salt. Mix well.
  2. In another bowl, whisk together the eggs, unsweetened almond milk, melted butter, and vanilla extract until fully combined.
  3. Pour the wet ingredients into the dry mixture and stir until a smooth batter forms.
  4. Prepare two small heatproof bowls or ramekins by greasing them lightly with a bit of melted butter.
  5. Divide the batter evenly between the prepared bowls.
  6. Fill a steamer pot with water and bring it to a simmer. Place the bowls in the steamer basket, making sure they do not touch the water.
  7. Cover the steamer with a lid and steam for about 15-20 minutes, or until the custard buns are firm to the touch and a toothpick inserted comes out clean.
  8. Carefully remove the buns from the steamer and let them cool for a few minutes before serving.
