- Red chili flakes - 1 teaspoon (adjust to taste)
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped (for garnish)
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and place them on a baking tray lined with parchment paper.
- Drizzle 1 tablespoon of olive oil over the eggplant slices and season with salt. Bake in the preheated oven for 20 minutes, flipping halfway through.
- In a small bowl, mix the minced garlic, ginger, red chili flakes, soy sauce, rice vinegar, and sesame oil.
- After 20 minutes, remove the eggplant from the oven and brush the spicy sauce mixture onto the eggplant slices.
- Return the eggplant to the oven and bake for an additional 5-7 minutes until the sauce becomes fragrant and slightly caramelized.
- Once done, take the eggplant out and let it cool for a minute. Garnish with chopped green onions and sesame seeds before serving.
