Ingredients

  • Eggplant - 1 medium (about 300g)
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Red chili flakes - 1 teaspoon (adjust to taste)
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped (for garnish)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and place them on a baking tray lined with parchment paper.
  3. Drizzle 1 tablespoon of olive oil over the eggplant slices and season with salt. Bake in the preheated oven for 20 minutes, flipping halfway through.
  4. In a small bowl, mix the minced garlic, ginger, red chili flakes, soy sauce, rice vinegar, and sesame oil.
  5. After 20 minutes, remove the eggplant from the oven and brush the spicy sauce mixture onto the eggplant slices.
  6. Return the eggplant to the oven and bake for an additional 5-7 minutes until the sauce becomes fragrant and slightly caramelized.
  7. Once done, take the eggplant out and let it cool for a minute. Garnish with chopped green onions and sesame seeds before serving.
