- Almond flour - 100g
- Egg - 1 large
- Mozzarella cheese (shredded) - 100g
- Shrimp (peeled and deveined) - 200g
- Garlic (minced) - 2 cloves
- Green onion (finely chopped) - 2 stalks
- Soy sauce (or coconut aminos for a gluten-free option) - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cooking oil (for frying) - 2 tablespoons
Steps
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, shredded mozzarella cheese, and egg. Mix until you have a dough-like consistency.
- Spread the dough evenly onto a parchment-lined baking tray to form two rectangular bases, about 1 cm thick.
- Bake the bases in the preheated oven for 10-12 minutes until golden and firm.
- While the bases are baking, prepare the shrimp topping by heating cooking oil in a skillet over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute.
- Add the shrimp, soy sauce, sesame oil, salt, and black pepper. Cook until the shrimp turn pink and opaque, around 3-4 minutes.
- Remove the skillet from heat and mix in the chopped green onions.
- Once the bases are done baking, remove them from the oven and top each base with the shrimp mixture.
- Return the shrimp-topped bases to the oven and bake for an additional 5-7 minutes.
- Remove from the oven, let cool slightly, and slice into pieces for serving.
