Ingredients

  • Almond flour - 100g
  • Egg - 1 large
  • Mozzarella cheese (shredded) - 100g
  • Shrimp (peeled and deveined) - 200g
  • Garlic (minced) - 2 cloves
  • Green onion (finely chopped) - 2 stalks
  • Soy sauce (or coconut aminos for a gluten-free option) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cooking oil (for frying) - 2 tablespoons

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, shredded mozzarella cheese, and egg. Mix until you have a dough-like consistency.
  3. Spread the dough evenly onto a parchment-lined baking tray to form two rectangular bases, about 1 cm thick.
  4. Bake the bases in the preheated oven for 10-12 minutes until golden and firm.
  5. While the bases are baking, prepare the shrimp topping by heating cooking oil in a skillet over medium heat.
  6. Add minced garlic and cook until fragrant, about 1 minute.
  7. Add the shrimp, soy sauce, sesame oil, salt, and black pepper. Cook until the shrimp turn pink and opaque, around 3-4 minutes.
  8. Remove the skillet from heat and mix in the chopped green onions.
  9. Once the bases are done baking, remove them from the oven and top each base with the shrimp mixture.
  10. Return the shrimp-topped bases to the oven and bake for an additional 5-7 minutes.
  11. Remove from the oven, let cool slightly, and slice into pieces for serving.
