Ingredients

  • Shirataki noodles - 200 grams
  • Shrimp, peeled and deveined - 200 grams
  • Bell pepper, sliced - 1 medium
  • Zucchini, julienned - 1 medium
  • Green onions, chopped - 2 stalks
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Soy sauce (or tamari for gluten-free) - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the shirataki noodles under cold water and drain well. Pat dry with a clean towel.
  2. In a large skillet or wok, heat the olive oil over medium-high heat. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the sliced bell pepper and julienned zucchini. Stir-fry the vegetables for about 3-4 minutes until they are slightly tender but still crisp.
  5. Add the drained shirataki noodles to the skillet with the vegetables. Pour in the soy sauce, sesame oil, and sprinkle with red pepper flakes. Stir well to combine and heat through for about 2 minutes.
  6. Return the cooked shrimp to the skillet and mix everything together. Season with salt and black pepper to taste.
  7. Remove from heat, garnish with chopped green onions, and serve immediately.
