Ingredients
- Shrimp - 300 grams, peeled and deveined
- Zucchini - 1 medium, spiralized
- Shirataki noodles - 200 grams, rinsed
- Bell pepper - 1 medium, sliced
- Carrot - 1 small, julienned
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons (or tamari for gluten-free)
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Green onions - 2 stalks, chopped
- Sesame seeds - 1 tablespoon, for garnish
- Salt and pepper - to taste
Steps
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and grated ginger to the skillet, sautéing for about 30 seconds until fragrant.
- Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes. Remove them from the skillet and set aside.
- In the same skillet, add the sliced bell pepper and julienned carrot. Stir-fry for about 3-4 minutes until they start to soften.
- Add the spiralized zucchini and rinsed Shirataki noodles to the skillet. Pour in the soy sauce and sesame oil, tossing everything together to combine.
- Return the cooked shrimp to the skillet and stir well to heat through, about 2 minutes. Season with salt and pepper to taste.
- Remove from heat and garnish with chopped green onions and sesame seeds before serving.
