- Soy sauce (or tamari) - 3 tablespoons
- Rice vinegar - 1 tablespoon
- Erythritol (or other keto sweetener) - 1 tablespoon
- Sesame seeds - 2 tablespoons, toasted
- Green onions - 2, sliced for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium bowl, combine the cubed chicken breast with salt and black pepper to taste. Let it marinate for about 10 minutes.
- In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the marinated chicken and sauté until golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of sesame oil, minced garlic, and grated ginger. Sauté for 1-2 minutes until fragrant.
- Stir in the soy sauce, rice vinegar, and erythritol, mixing well to create the sauce. Let it simmer for about 2 minutes to allow the flavors to meld.
- Return the cooked chicken to the skillet, tossing it in the sauce until evenly coated. Cook for an additional 2-3 minutes, allowing the chicken to absorb the sauce.
- Remove from heat, sprinkle toasted sesame seeds on top, and garnish with sliced green onions before serving.
