- Water - 1/2 cup
- Scallions - 1/4 cup, finely chopped
- Ground pork or beef - 200 grams
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Soy sauce (or coconut aminos) - 1 tablespoon
- Egg - 1 large
- Black pepper - 1/4 teaspoon
- Oil (for frying) - 2 tablespoons
Steps
- In a mixing bowl, combine almond flour, psyllium husk powder, salt, and water to form a dough. Knead the dough for about 2-3 minutes until it is smooth.
- Add finely chopped scallions into the dough, mixing well to distribute evenly.
- Divide the dough into two equal portions and flatten each into a round pancake shape, about 1/2 inch thick.
- In a separate bowl, mix ground pork or beef, minced garlic, grated ginger, soy sauce, egg, and black pepper until well combined.
- Shape the meat mixture into two burger patties.
- Heat 1 tablespoon of oil in a non-stick skillet over medium heat. Cook the burger patties for about 4-5 minutes on each side until cooked through. Remove from skillet and set aside.
- In the same skillet, add the remaining oil and place the scallion pancakes in the skillet. Cook for 3-4 minutes on each side until golden brown and crispy.
- To assemble, place a burger patty between two scallion pancakes and serve immediately.
