Ingredients

  • Red beans - 120 grams
  • Coconut milk - 200 ml
  • Water - 500 ml
  • Erythritol or monk fruit sweetener - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Rinse the red beans under cold water and soak them in water for at least 4 hours or overnight to soften.
  2. After soaking, drain the beans and place them in a pot with 500 ml of fresh water.
  3. Bring the water to a boil, then reduce the heat to low and simmer for about 30 minutes, or until the beans are tender.
  4. Once the beans are cooked, add the coconut milk, erythritol (or sweetener of choice), vanilla extract, and a pinch of salt.
  5. Stir the mixture well and simmer for another 10-15 minutes, allowing the flavors to meld together.
