Ingredients

  • Cauliflower rice - 300 grams
  • Pork tenderloin - 200 grams, diced
  • Egg - 2, beaten
  • Green onion - 2, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Bell pepper - 1/2, diced
  • Carrot - 1 small, diced
  • Frozen peas - 50 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil in a large skillet or wok over medium heat.
  2. Add the diced pork tenderloin and cook until browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
  4. Add the diced bell pepper, carrot, and frozen peas to the skillet. Sauté for about 3-4 minutes until the vegetables are tender.
  5. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix with the vegetables.
  6. Add the cauliflower rice to the skillet, along with the cooked pork, soy sauce, sesame oil, salt, and pepper. Stir everything together and cook for another 5 minutes or until heated through.
  7. Garnish with chopped green onions before serving.
