Ingredients
- Cauliflower rice - 300 grams
- Pork tenderloin - 200 grams, diced
- Egg - 2, beaten
- Green onion - 2, chopped
- Garlic - 2 cloves, minced
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Bell pepper - 1/2, diced
- Carrot - 1 small, diced
- Frozen peas - 50 grams
- Salt - to taste
- Black pepper - to taste
Steps
- Heat olive oil in a large skillet or wok over medium heat.
- Add the diced pork tenderloin and cook until browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
- Add the diced bell pepper, carrot, and frozen peas to the skillet. Sauté for about 3-4 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix with the vegetables.
- Add the cauliflower rice to the skillet, along with the cooked pork, soy sauce, sesame oil, salt, and pepper. Stir everything together and cook for another 5 minutes or until heated through.
- Garnish with chopped green onions before serving.
