Ingredients

  • Pork belly - 300 grams
  • Soy sauce - 30 ml
  • Rice vinegar - 15 ml
  • Sesame oil - 10 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Almond flour - 100 grams
  • Psyllium husk - 10 grams
  • Egg - 1, large
  • Mozzarella cheese - 100 grams, shredded
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Cilantro - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger. Add the pork belly and marinate for at least 30 minutes.
  3. After marinating, place the pork belly on a baking tray lined with parchment paper and bake for 30-35 minutes until crispy and cooked through.
  4. In a separate bowl, combine almond flour, psyllium husk, baking powder, salt, and pepper. Mix well.
  5. In another bowl, melt the mozzarella cheese in the microwave for about 30 seconds until gooey. Add the melted cheese to the dry ingredients along with the egg and mix until a dough forms.
  6. Divide the dough into two equal portions and flatten each portion into a round shape, resembling a pizza base.
  7. Heat a non-stick skillet over medium heat and cook each dough round for about 3-4 minutes on each side until golden brown.
  8. Once the pork belly is done, slice it into bite-sized pieces.
  9. To assemble, place the slices of pork belly on the cooked dough rounds, top with chopped green onions and cilantro, and serve warm.
