Ingredients

  • Almond flour - 1 cup
  • Mozzarella cheese (shredded) - 1 cup
  • Cream cheese - 60 g
  • Egg - 1 large
  • Peking duck (shredded) - 200 g
  • Hoisin sauce (low sugar) - 2 tbsp
  • Green onions (sliced) - 2 stalks
  • Cilantro (chopped) - 2 tbsp
  • Red bell pepper (sliced) - 1/2
  • Sesame oil - 1 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a microwave-safe bowl, combine mozzarella cheese and cream cheese. Microwave for about 1 minute until melted, then stir to combine.
  3. Add almond flour, egg, salt, and black pepper to the cheese mixture. Mix until a dough forms.
  4. On a parchment-lined baking sheet, spread the dough into a round pizza shape, about 1/2 inch thick.
  5. Bake the crust in the preheated oven for 12-15 minutes or until golden brown.
  6. While the crust is baking, mix the shredded Peking duck with hoisin sauce in a bowl.
  7. Once the crust is done, remove it from the oven and spread the Peking duck mixture evenly over the top.
  8. Top with sliced red bell pepper, green onions, and cilantro. Drizzle with sesame oil.
  9. Return the pizza to the oven and bake for an additional 5-7 minutes until heated through.
