- Almond flour - 1 cup
- Mozzarella cheese (shredded) - 1 cup
- Cream cheese - 60 g
- Egg - 1 large
- Peking duck (shredded) - 200 g
- Hoisin sauce (low sugar) - 2 tbsp
- Green onions (sliced) - 2 stalks
- Cilantro (chopped) - 2 tbsp
- Red bell pepper (sliced) - 1/2
- Sesame oil - 1 tsp
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
Steps
- Preheat the oven to 200°C (400°F).
- In a microwave-safe bowl, combine mozzarella cheese and cream cheese. Microwave for about 1 minute until melted, then stir to combine.
- Add almond flour, egg, salt, and black pepper to the cheese mixture. Mix until a dough forms.
- On a parchment-lined baking sheet, spread the dough into a round pizza shape, about 1/2 inch thick.
- Bake the crust in the preheated oven for 12-15 minutes or until golden brown.
- While the crust is baking, mix the shredded Peking duck with hoisin sauce in a bowl.
- Once the crust is done, remove it from the oven and spread the Peking duck mixture evenly over the top.
- Top with sliced red bell pepper, green onions, and cilantro. Drizzle with sesame oil.
- Return the pizza to the oven and bake for an additional 5-7 minutes until heated through.
- Remove from the oven, slice, and serve hot.
