- Almond flour - 100g
- Coconut flour - 20g
- Erythritol - 30g
- Unsweetened cocoa powder - 10g
- Butter - 30g, melted
- Egg - 1 large
- Vanilla extract - 1 tsp
- Salt - 1/4 tsp
- Sugar-free red bean paste - 100g
- Water - 2 tbsp
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the almond flour, coconut flour, erythritol, cocoa powder, and salt.
- In a separate bowl, whisk the melted butter, egg, vanilla extract, and water until combined.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Divide the dough into two equal parts and flatten each piece into a disc.
- Place a tablespoon of sugar-free red bean paste in the center of each disc and fold the edges over to seal, forming a ball.
- Press each ball into a mooncake mold to shape and create designs on the surface.
- Place the shaped mooncakes on a lined baking tray and bake for 25-30 minutes until golden brown.
- Allow to cool for 10 minutes before serving.
