- Firm tofu - 300 grams
- Cauliflower - 1 medium head (about 600 grams)
- Ground pork - 100 grams
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Doubanjiang (fermented chili bean paste) - 2 tablespoons
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 tablespoon
- Green onions - 2, chopped
- Chicken broth - 100 ml
- Salt - to taste
- Pepper - to taste
- Cooking oil - 1 tablespoon
Steps
- Start by preparing cauliflower rice: remove the leaves and stem from the cauliflower, then pulse florets in a food processor until they resemble rice grains. Set aside.
- Cut the firm tofu into small cubes and set aside.
- In a large skillet, heat cooking oil over medium heat. Add minced garlic and ginger, stirring until fragrant (about 30 seconds).
- Add the ground pork to the skillet and cook until browned, breaking it apart with a spatula (about 5-7 minutes).
- Stir in doubanjiang, soy sauce, rice vinegar, and sesame oil, mixing well to combine.
- Add the chicken broth and bring to a simmer, then gently fold in the tofu cubes. Cook for an additional 5 minutes, allowing the flavors to meld.
- While the sauce simmers, in a separate pan, cook the cauliflower rice over medium heat for about 5-7 minutes until tender. Season with salt and pepper to taste.
- To serve, divide the cauliflower rice between two plates and top with the mapo tofu mixture. Garnish with chopped green onions.
