Ingredients

  • Firm tofu - 300 grams
  • Cauliflower - 1 medium head (about 600 grams)
  • Ground pork - 100 grams
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Doubanjiang (fermented chili bean paste) - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Chicken broth - 100 ml
  • Salt - to taste
  • Pepper - to taste
  • Cooking oil - 1 tablespoon

Steps

  1. Start by preparing cauliflower rice: remove the leaves and stem from the cauliflower, then pulse florets in a food processor until they resemble rice grains. Set aside.
  2. Cut the firm tofu into small cubes and set aside.
  3. In a large skillet, heat cooking oil over medium heat. Add minced garlic and ginger, stirring until fragrant (about 30 seconds).
  4. Add the ground pork to the skillet and cook until browned, breaking it apart with a spatula (about 5-7 minutes).
  5. Stir in doubanjiang, soy sauce, rice vinegar, and sesame oil, mixing well to combine.
  6. Add the chicken broth and bring to a simmer, then gently fold in the tofu cubes. Cook for an additional 5 minutes, allowing the flavors to meld.
  7. While the sauce simmers, in a separate pan, cook the cauliflower rice over medium heat for about 5-7 minutes until tender. Season with salt and pepper to taste.
  8. To serve, divide the cauliflower rice between two plates and top with the mapo tofu mixture. Garnish with chopped green onions.
