Ingredients

  • Almond flour - 100g
  • Mozzarella cheese, shredded - 150g
  • Cream cheese - 50g
  • Egg - 1 large
  • Salt - 1/2 tsp
  • Ground black pepper - 1/4 tsp
  • Firm tofu - 200g, diced
  • Ground pork - 100g
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 tsp
  • Doubanjiang (spicy bean paste) - 1 tbsp
  • Soy sauce - 1 tbsp
  • Sesame oil - 1 tsp
  • Green onions, chopped - 2 tbsp
  • Cilantro, chopped - 2 tbsp (optional for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, 100g of shredded mozzarella, cream cheese, egg, salt, and black pepper. Mix until a dough forms.
  3. Press the dough into a round pizza shape on a baking sheet lined with parchment paper, about 1 cm thick.
  4. Bake the crust in the preheated oven for 10-12 minutes or until golden.
  5. While the crust is baking, heat sesame oil in a skillet over medium heat. Add minced garlic and ginger, sauté for 1 minute until fragrant.
  6. Add ground pork to the skillet, cooking until browned, about 5-7 minutes. Drain excess fat if necessary.
  7. Stir in the diced tofu, doubanjiang, and soy sauce. Cook for an additional 5 minutes, mixing gently to avoid breaking the tofu.
  8. Once the pizza crust is done, remove it from the oven and spread the mapo tofu mixture evenly on top.
  9. Sprinkle the remaining mozzarella cheese on top of the mapo tofu mixture.
  10. Return the pizza to the oven and bake for an additional 5-7 minutes, until the cheese is melted and bubbly.
  11. Remove from the oven, garnish with chopped green onions and cilantro if desired, then slice and serve hot.
