Ingredients
- Almond flour - 100g
- Mozzarella cheese, shredded - 150g
- Cream cheese - 50g
- Egg - 1 large
- Salt - 1/2 tsp
- Ground black pepper - 1/4 tsp
- Firm tofu - 200g, diced
- Ground pork - 100g
- Garlic, minced - 2 cloves
- Ginger, minced - 1 tsp
- Doubanjiang (spicy bean paste) - 1 tbsp
- Soy sauce - 1 tbsp
- Sesame oil - 1 tsp
- Green onions, chopped - 2 tbsp
- Cilantro, chopped - 2 tbsp (optional for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, 100g of shredded mozzarella, cream cheese, egg, salt, and black pepper. Mix until a dough forms.
- Press the dough into a round pizza shape on a baking sheet lined with parchment paper, about 1 cm thick.
- Bake the crust in the preheated oven for 10-12 minutes or until golden.
- While the crust is baking, heat sesame oil in a skillet over medium heat. Add minced garlic and ginger, sauté for 1 minute until fragrant.
- Add ground pork to the skillet, cooking until browned, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the diced tofu, doubanjiang, and soy sauce. Cook for an additional 5 minutes, mixing gently to avoid breaking the tofu.
- Once the pizza crust is done, remove it from the oven and spread the mapo tofu mixture evenly on top.
- Sprinkle the remaining mozzarella cheese on top of the mapo tofu mixture.
- Return the pizza to the oven and bake for an additional 5-7 minutes, until the cheese is melted and bubbly.
- Remove from the oven, garnish with chopped green onions and cilantro if desired, then slice and serve hot.
