Ingredients

  • Ripe mango - 150 grams, pureed
  • Coconut milk - 200 milliliters, full-fat
  • Erythritol - 2 tablespoons
  • Gelatin powder - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Pinch of salt

Steps

  1. In a small saucepan, combine the coconut milk and erythritol over medium heat. Stir until erythritol is completely dissolved.
  2. In a separate bowl, sprinkle the gelatin powder over 3 tablespoons of cold water and let it sit for 5 minutes until it blooms.
  3. Once the coconut milk is warm (do not boil), remove it from the heat and add the bloomed gelatin, stirring until fully dissolved.
  4. Add the pureed mango, vanilla extract, lemon juice, and a pinch of salt to the mixture, stirring well to combine.
