Ingredients

  • Erythritol - 50 grams
  • Lime juice - 1 tablespoon
  • Coconut cream - 100 milliliters
  • Water - 100 milliliters

Steps

  1. If using fresh lychee, peel and remove the pits. If using canned lychee, drain and rinse well.
  2. In a blender, combine the lychee, erythritol, lime juice, coconut cream, and water. Blend until smooth.
  3. Taste the mixture and adjust sweetness by adding more erythritol if desired.
  4. Pour the mixture into a shallow dish and freeze for about 2 hours, or until it starts to firm up.
